I understand that there was no list of dating for the Model 25. But I understand (and recently read) that there is a two digit number under the barrel of a Model 25 that tells when the barrel was manufactured which helps in the dating of the gun. Any truth to this statement? Thanks in advance.

Yes, that is true. However, with just a 5-year production run (March 1949 – late 1954) consisting of approximately 88,000 guns, the precise date of manufacture is nearly a moot point.
