I have an original 1873 Winchester in 44-40, and I have noticed that it sometimes takes a recock to set off a round. Is there something I can adjust or check to correct this situation?

Two things can cause that. If the firing pin in the bolt is stuck with dried grease and oil or the main spring is weak. The main spring does have a screw that you can turn in to increase the force on the hammer.
