The first thing you look at is the fit of the wood to the metal. It should be a tight up to the metal. The forearm can shrink so you get a gap on the ends. The other way to tell is the stock is sometimes numbered to the gun with a assemble number on the left side of the lower tang. If the number is there it should be on the top of the stock under the upper tang and on the butt plate. There will not be any numbers on the forearm. The chances of a number being on the wood is better if its a deluxe grade of wood.
Are you concerned that the wood is not Winchester wood or it was replaced with Winchester wood?

With no stamps on the tang then all you have to go by is the fit of the wood. With those stamps in the wood kind of tells me its Winchester wood.
