Having a little confusion here. I’m looking for a 30-06. Are they ALWAYS marked 30GOV’T06?  Any other variations?    I’m pretty sure 30 ARMY and 30 US are 30-40 Krag, right?

Yes, they are all marked 30 GOV’T 06, and Yes the 30 U.S. and 30 ARMY are both the 30/40 Krag cartridge.
