…friend of mine is curious to know the signification, if any, of a S.H.S. marking on the butt plate of a third model Winchester-Hotchkiss (in 45-70, if this information can be relevant).

On top of my mind, I thought it might be the logo of a cinema prop rental service (?)

…swap just the knobs and the shaft and knob assemblies are likely different for each gun. Looks like I'll have to keep looking for a parts sight with target knobs.

Your rifle was recorded by Bob Porter, who kept a card file with pretty much every pre-64 M70 he saw between about 1975 and 2010.  That's where the info came from...

…bolt action .22’s. We don’t get to see that level of quality and workmanship in similar guns today. The old sporters shoot nearly as well as the target models and the 47’s and 67’s are hard to beat for introducing young shooters to the sport. Matter of fact, my 67A Junior is hanging out in Houston
